Ingredients:
- Pineapple juices OR root beer
- Olive oil
- 1.25 lbs of stew steak
- 1 tbs curry
- 1/2 tbs nutmeg
- 1 tbs cinnamon
- Vegetable broth
- 1 sweet potato
- 32 oz of diced tomatoes
- Mangos
Steps:
- Marinate the steak
- If using pineapple juice, for not much more than an hour. Pineapple juice has a tendency of bleaching steak and making it… moosh.
- If using root beer(I prefer this to the pineapple juice), marinate the steak over night
- Cover the bottom of a large pot with olive oil
- Add the steak and brown it
- Setting the stove to about “med” add the spices and broth and let stew/boil for about an hour stirring it occasionally
- Dice the sweet potato and add
- Drain the diced tomatoes and add
- Add the mangos
- Bring the temp down a bit and let simmer for another 30mins(until the sweet potatoes are soft)
